in order to write an applet we would like to receive informations about  
gdb serial protocol,

format,
characters range,
field separators,
etc,

could you kindly suggest where such this material is available??

It should be all in the GDB manual, section Remote Protocol.

You may also find this application note on writing a Remote Serial
Protocol server a useful addition to the GDB user guide and example
stubs.
