Do any of you know if it's possible to get the GDB to send the commands used
for remote debugging in a file, instead of on the serial port (Filling up the
file with commands)?.

Maybe this:
(gdb) help set remotelogfile
Set filename for remote session recording.
This file is used to record the remote session for future playback
by gdbserver.
